While blending is a technique commonly employed in wines, champagne, whiskey, sherry, and cognac, it is uncommon in the realm of nihonshu. This winning sake isn’t new to accolades; it has been described as “a complex blend of citrus and herbal notes on the nose, reminiscent of a young white Burgundy.” The blend features Yamahai/Kimoto methods, Kuranohana and Miyamanishiki sake rice and Miyagi B3 and Kyokai 7 yeast.

While delightful cold, room temperature, or warm, this vintage 2019 tokubetsu junmai, which is aged for 4 years (2 years in the tank & 2 years in the bottle) before release, has a richness, fresh acidity and umami that intensifies when heated. Complex nose of aniseed and fresh basil. Round mouthfeel with fresh acidity. Lingering flavours of pineapple and almond milk.
